ISO Chickpea Salad

ISO Chickpea Salad

I have been making Chickpea and Tuna salad but can't find a recipe that wows me...even a fabulous dressing would be great!

My first thought when I read that was "Ewww!"
You've made it before you said? How did it taste?
Now I'm curious. If you find the recipe, can you post it? Sounds interesting. Very protein packed.

I have been mixing Chickpea with Tuna, peppers and tomatoes. The dressing I have been using is pinch of oregano with a couple of spashes of lemon with a could of tablespoons of Kraft Greek dressing.

It's good but not great! It seems to be missing something!

Agreed - fresh crushed garlic is what you are missing. you may even try some dried chile flakes and more lemon.

Oh ya and let it sit for an hour or two before eating if you have the time. It will meld all the flavours.

Maybe it's garlic thats been missing. I have been avoiding as it's my work lunch and I don't want vampire breath for my employees:)

I have been marinating overnight.

i made this chicken salad the other night and it was good. think you could use tuna instead.

"grilled chicken and chickpea salad";
8oz.skinless chicken breasts
salad; 2cups diced plum tomatoes (i used regular)
11/2 cups drained and rinsed chickpeas
1cup diced green pepper
1/3cup fresh tarragon or dill (i used dry dill)
1/3cup diced red onion
2oz.lower fat feta cheese,crumbled (optional)
dressing;
2tbsp olive oli
2tbsp freshly squeezed lemon juice
1/2tsp dijon mustard
1tsp minced garlic
1/8tsp salt
1/8tsp fresh ground pepper

!. grill chicken on barbeque. do not overcook. cool slightly then slice thinly
2.make salad in large bowl, combine tomatoes,chickpeas,green pepper,tarragon,red onion and feta. add chicken.
3. to make dressing, in small bowl, whisk all ingredients. pour over salad and toss.

I think I found the winning dressing!

I garlic clove finely chopped
1 tbsp Balsamic Vinegar
1 tbsp Honey
2 tbsp Lemon juice
1/2 tsp Dijon Mustard
2 tbsp Olive Oil
Salt and pepper to taste.

I sprinked dry dill and fresh chives on the chickpeas before pouring over the dressing.
