What do you eat for lunch?
Breakfast is easy and dinner is easy and feeding our DD is easy but I have such a hard time figuring out what to make me and my DH for lunches for at home and for taking to work. What do others eat for lunch?

I try to balance out lunch and dinner to make sure that we are getting our food groups in.
I like sandwiches, soups (homemade), stews and salads, because you can make them for a dinner and freeze several smaller lunch portions to be used later. pull them out the night before and they just need to be microwaved or stoved for a few mins and voila!
I also like cheese, crackers, meat and fruit/veggie spreads because they are easy, I shop weekly wash everything and have it already in containers ready to go so it just grab a little of everything. I love cooking up chicken with fruit or honey mustard or sweet and sour etc, and having no cook kebobs ..they're fun and the kids love the finger food idea.
single meat pies are really easy, because you can buy the already done pastries and you can fill em up with stew and in the oven 30mins and packs easy...
pizzas and wraps too! you can put just about anything in either so its great to clear away leftovers (my faves being greek, vegetarian and steak and blue cheese..so easy and delicious!

i buy bagged lettuce or baby spinach so i just grab a handful of greens and add a can of salmon or hard boiled eggs. i cook them a dozen at a time and keep them on hand.
veggies and hummus
i make a lot of omelettes too.
dh takes sandwiches or leftovers to work.
