Slow cooker chicken recipes please!
I have a box of chicken breasts that I need ideas for! I'd like to make some sort of slow cooker meal tomorrow - any recipes you'd care to share? Thanks!

Here are some! I haven't tried them all. And some are from KIV.
CROCKPOT CHICKEN PIZZA
4 skinless, boneless chicken breast- cut into bite size pieces
1 onion, chopped
1 green bell pepper, chopped
2 large cans tomato sauce
2 large cans diced tomatoes
1 tablespoon dried parsley
1 tablespoon dried oregano
1 tablespoon dried basil
1 tsp. thyme
4 cloves garlic, pressed
Place all ingredients in slow cooker. Stir to make sure all chicken is coated well. Cook on Low setting for 8 hours, until chicken and vegetables are tender.
Note: I served this over rotini pasta, topped with a sprinkle of mozzarella cheese and a big slice of garlic bread.
CROCKPOT GRANNY'S ITALIAN DINNER
4 chicken breasts, cut in half
1 pkg sweet Italian sausage, cut in half
1 Lg. (16 oz) container fresh mushrooms, cut in half
2 Lg. onions, sliced thickly
2 Lg. green peppers, sliced thickly
1 Lg. (28 oz) can stewed tomatoes
1 (8 oz) can tomato sauce
1 Tablespoon Italian seasoning
Salt & Pepper (as much as you like)
Mix all ingredients together in crockpot; cook 6-8 hours on low. Serve over pasta with lots of shredded cheddar cheese. This is great!! Kids love it!
CROCKPOT SWISS CHICKEN CASSEROLE
6 chicken breasts, boneless and skinless
6 slices Swiss cheese
1 can cream of mushroom soup
1/4 cup milk
2 cups stuffing mix
1/2 cup butter or margarine, melted
Lightly grease crock pot or spray with cooking spray. Place chicken breasts in pot. Top with cheese. Combine soup and milk, stirring well. Spoon over cheese; sprinkle with stuffing mix. Drizzle melted butter over stuffing mix. Cook on low 8 to 10 hours or high 4 to 6 hours. Serves 6.
THAI CHICKEN
8 chicken thighs (boned & skinned) (do not use breasts-they dry out)
1/3 cup peanut butter
1 chopped green pepper
1 tsp of chili pepper
1/2 cup chicken stock
1/4 soy sauce
2 tbsp lime juice
2 tsp minced fresh ginger
Place chicken in slow cooker.
Combine remaining ingredients.
Pour on top of chicken.
Cook on low for 6-8 hours
Crockpot Jambalaya
Ingredients
1 ½ lb. chicken breast
28 once can of tomatoes
1 cup of chicken broth
2 tsp parsley
1 tsp cayenne pepper
1 cup of diced celery
1 pound of turkey sausages sliced
1pound of thawed cooked shrimp
1 chopped green pepper
2 tsp Cajun seasoning
2 cups of cooked rice
Cut into cubes chicken. Slice sausage. Chop onion, green pepper, & celery. Put all into crock pot. Add remaining ingredients except shrimp & rice. Cook on low heat for approximately 7 hours. About 30 minutes before serving, add cooked Shrimp & cooked rice.
Broccoli Rice and Chicken
INGREDIENTS:
• 2 pounds chicken tenders or boneless chicken breasts cut in strips
• 1 1/4 cups uncooked converted rice
• 1 package Knorr's Cream of Broccoli Soup Mix
• 1 1/2 cups chicken broth
• pepper, to taste
PREPARATION:
Place rice in a lightly greased slow cooker/Crock Pot. Sprinkle with parsley and pepper. Top with chicken pieces. Mix together the soup mix and broth. Pour over chicken and rice. Cover and cook on low for 6 to 8 hours.
Chicken Curry
4 chicken breast cut in cubes
1 cup of diced mushrooms
1 cup of diced zucchini
1 green pepper chopped
2 cloves of garlic minced
2 cans of tomato soup
8 tablespoons of Curry paste
¼ of a cup of cream
Mix together top 7 ingredients and add to crockpot. Cook on low all day or on High for 4-5 hours. Add cream ½ before eating
THAI CHICKEN CURRY
1 can coconut milk - (14-ounce)
1/2 tablespoon red curry paste
1 tablespoon soy sauce
1 1/2 tablespoons brown sugar
1 tablespoon lime juice
1/3 cup basil leaves - coarsely chopped
2 teaspoons olive oil
1 pound chicken breast halves - cut in 1" cubes
1/2 medium bell pepper - julienned
1 medium carrot - shredded
1 medium zucchini – shredded
Clubhouse Chicken:
Chicken thighs (skinned & boned)
sliced black forest ham
sliced swiss cheese
dijon mustard
1 can cream of mushroom soup
1/2 cup evaporated milk
thyme & paprika
Flatten chicken thighs with a mallet. Spread each one with dijon mustard. Lay a piece of ham on top, then a slice of cheese, roll up and secure with a toothpick. Place in crock pot, sprinkle with thyme & paprika. Mix the soup & milk together, pour over top, cook on low for 6 hours or more. YUM! Serve over rice.
Crockpot Cream Cheese Chicken
3 lbs chicken pieces
1 (2/3 ounce) package Italian salad dressing mix
4 tablespoons melted butter (divided)
1 small onion, chopped
1 garlic clove, chopped
1 (10 1/2 ounce) can cream of chicken soup
8 ounces cream cheese
1/2 cup chicken broth
1. Place chicken pieces in crockpot and sprinkle Italian seasoning over chicken.Sprinkle with 2 tablespoons melted butter.
2. Cook on low for 4-6 hours.
3. Melt 2 tablespoons butter in a sauce pan and saute onion and garlic. Add Cream of Chicken Soup, cream cheese, and chicken broth. Stir until smooth.
4. Add this mixture to crockpot and cook on low for an additional hour.
Almond Chicken
~~~~~~~~~~~~
2 tbsp of cornstarch
1 ½ cups chicken broth
2 tbsp soy sauce
1 cup of sliced mushrooms
4 chicken breasts chopped into bite size pieces
1-2 stalks celery chopped
1 onion chopped
1-4 tbsp sliced almonds
2 piece bacon diced
1 tbsp butter

1. Pour chicken broth into slow cooker, and add soy sauce.
2. Put bacon in frying pan and cook till done. Scoop bacon out and put into slow cooker.
3. Add butter to bacon grease in frying pan and add chicken and cook till chicken is browned. Scoop chicken out and put into crock pot/slow cooker.
4. Now add vegetables (celery, onion, mushrooms) to frying pan and cook till celery goes a bright green... cooked but not completely cooked. And pour it all into the slow cooker.
* You can add the almonds now if you want to... I do so I don't have to worry about my kids choking on the nuts... they go soft when cooked with the rest of the stuff*
5. Put lid on and cook on high for 2-3 hrs or on low for 4-5 hours.
6. in the last 15 mins mix cornstarch with about ¼ of cup of broth from crockpot and add back in and stir.
Serve over rice or chow mein noodles.
Crock Pot Chicken with Black Beans and Cream Cheese
4 or 5 FROZEN boneless chicken breasts
1 15 1/2 oz can black beans
1 can corn
1 15 oz jar salsa ( I used medium)
1 8 oz package of cream cheese ( I used light)
Put the FROZEN chicken breasts in crock pot.
Add drained black beans, drained corn and salsa.
Cook on HIGH for 4-5 hours until chicken is cooked.
Add cream cheese (just throw it on top) and cook for another 1/2 hour. Stir.
Sesame Chicken
lbs skinless Chicken thighs
1/2 cup soy sauce
2 tbsp Sherry
1/3 cup Brown sugar, packed
1/4 tsp garlic powder
1/4 ground ginger
2 tbsp ketchup
2 tbsp toasted sesame seeds
add chicken to slow cooker <we use whatever we have on hand, thighs, drumsticks, cubed chicken breast etc>
combine remaining ingredients and pour over chicken, coating each peice.
cook 6-8 hours on low or 3-4 on high
we serve with rice or noodles, yummy

For chicken my favourite thing to do with the slow cooker is put the chicken in the pot, and add one of those tetra pack of soups, like vegetable and potato soup, or wild harvest mushroom. Then top with vegetables. You end up with the chicken cooked in a nice sauce without having to buy or mix a ton of ingrediants. Very handy for 5 minutes before leaving for work dinner planning.

I have my favorite chicken leg recipe in the slow cooker right now actually.
(kinda funny)
If you're like me and hate chicken legs done in the oven, you will love this one.
I usually do NOT eat drumsticks but they're usually inexpensive.
I made this recipe myself.
6 or more chicken legs
1/2 tsp salt 1/2 tsp onion powder
1/2 tsp pepper 1/2 tsp garlic powder
1 tsp basil 1 cp of chicken broth
*(an oxo cube in 1 cp water)*
1) Wash and place chicken in crock pot.
2) Mix spices in a small bowl.
3) Pour broth over chicken.
4) Sprinkle spices over chicken
Cook on low heat for 4 hrs.
I usually serve this with rice and veggies.

MAPLE MUSTARD CHICKEN THIGHS:
2 pounds turkey (or chicken) thighs, skinned
½ cup pure maple syrup (I used maple flavoured syrup, was good too!)
1/3 cup coarse-grain brown mustard (like old fashioned Dijon)
1 tbsp minute tapioca
INSTRUCTIONS:
Rinse turkey thighs & pat dry.
Place in slow cooker.
Mix together remaining ingredients & pour over turkey.
Cover & cook on low for 6 hours or high for 3 hours.
The first Thai Chicken recipe the pp listed is from me! This one is super easy & yummy! Here's another one...........

1 roasting chicken (4 Lbs)
6 cloves garlic, halved
1 onion, quartered
1 stalk celery, cut into 3 pieces
1 tsp dried thyme
½ tsp paprika
½ cup chicken stock
½ cup dry white wine
1 tbsp worcestershire
INSTRUCTIONS:
Rinse chicken inside & out, pat dry. Gently loosen skin from breast with fingers, and insert garlic. Place onion & celery in the cavity.
Tie legs together with kitchen string, and secure wings to body.
Place chicken in slow cooker, breast side up. Sprinkle with thyme & paprika.
Mix wine, stock & Worcestershire, add to slow cooker.
Cover and cook on low for 8-10 hours. You may brown chicken under broiler for 5-7 minutes if desired.
Enjoy!

You guys have to give this one a try, it is so easy and so darn tasty!
(really easy to make too)
Ingredients:

1/2 cp of ketchup
1/2 cp of bbq sauce(I use hickory flavoured)
1/2 cp of honey
2tbsp lemon juice
1 tsp vinager
2 tbsp olive oil
4 garlic cloves, minced
1 1/2 tsp curry powder
1 tsp onion powder
1 tsp chili powder
salt and pepper to taste
Directions:
1) Wash chicken under cold water and arrange in crockpot.
2) In a bowl combine all ingrediants and mix well.

*My hubby has taken the chicken out and grilled on the bbq for 5 mins*
(it is a little crispy from the bbq)

One of my favourite chicken recipes for the slow cooker is very simple
1 whole chicken (although I bet it would work with any chicken parts as well)
Melted butter (as much or little as you like)
Lemon Pepper
This makes an awsome chicken and after it is done you can transfer the liquid to a pot and add a little flour and make a delicious gravy. I usually serve it with mashed potatoes cause the gravy tastes great with them.
