Looking for sugar free muffin recipe

I am looking for a really good sugar free muffin recipe. We own a coffee shop and have many customers who are diabetic. At this time all our treats contain sugar.....i would love to be able to offer my customers who are diabetic something tasty too.

I have some recipes that use concentrated apple juice instead of sugar. Would that work? I don't know much about diabetics and the different kinds of sugars.

I also have a book with recipes for kids with allergies and it has a recipe for Peanut Butter Squares that have no sugar, just sweetened with raisins and banana. Let me know if you want it. :wink:

Peanut Butter Squares

*My disclaimer: I have not made this recipe before, so I cannot guarantee its tastiness* :lol:

From the book "Feeding Your Preschooler-Tasty Nutrition for kids two to six"

Peanut Butter Squares

1 egg
1 large banana
1/2 C. peanut butter
3 Tblsp. raisins
1 C. oatmeal
1/2 C. coconut, unsweetened
1/3 C. unhulled sesame seeds

Cream first 4 ingredients in blender or with a mixer. Pour into a bowl and mix in remaining ingredients.
Pour mixture into a greased square cake pan, 8X8 in.
Bake about 25 min. in 350 degree oven until edges pull away from sides of pan.

Makes 16 squares.
Provides protein equivalent to 1/2 oz (15 g) of meat, fish or poultry.

Here's a muffin recipe

This is from the book "What to expect when you're expecting"

Banana Muffins
Makes 18 muffins

3 very ripe bananas, about 1 1/2 C. pureed
1/2 C. plus 2 Tbsp. apple juice concentrate (unsweetened)
1 Tbsp. orange juice concentrate (unsweetened)
2 Tbsp. vegetable oil
1 tsp. fresh lemon juice
1 1/4 C. whole wheat flour (*I find WW pastry flour makes lighter results)
3/4 C. wheat germ
1 1/2 tsp. ground cinnamon
2 tsp. baking powder
3/4 C. raisins or chopped dates
1/2 C. coarsly chopped walnuts
2 egg whites
vegetable cooking spray

1. Preheat oven to 350 degrees F
2. Process the bananas, juice concentrates, oil, lemon juice in a blender until smooth. Combine flour, wheat germ, cinnamon, and baking powder in a mixer bowl
3. Stir the banana mixture into the dry ingredients to make a thick batter; then stir in the raisins and walnuts
4. Beat the egg whites until stiff. Gently beat into batter, using lowest speed on an electric mixer.
5. Spoon batter into 18 muffin cups coated with vegetable cooking spray. Bake for 20-25 min. Remove from the tins immediately.

I have made some delicious muffins from the recipes off this website.
They are from professional Bed and Breakfasts, so they are tested and customer-approved :wink:

Was just reading about sugar on another thread and it occurred to me that fruit juice concentrate is probably NOT actually good for diabetics since it is still sugar :? Sorry to lead you down the wrong path.

Hopefully someone who is a diabetic or knows about diabetes can help you. Good luck.

the library has a generous selection of books for sugar-free and natural baking, diabetic baking, some very *hippie* some very gourmet. I'd recommend looking online or browsing the downtown branch.

I also have a little cookbook you are welcome to come get called "the all-natural, mini-cal sweetening without chemicals dessert book" circa 1978 & uses very little to no sugar. I haven't tried any recipes.. but you could! I live in fernwood, it's yours if you want it. where is your coffee shop?
